Razor-clams rice

Seafood is one of my pet peeves, so combined with rice or pasta it is off the charts.





Ever since I was a little girl I've loved seafood. A taste inherited from my father. This taste for food and talking about it is an inheritance from him. Everywhere I go the places where I eat are the most registered; it was like that with my father and it's like that with me.


Back to seafood, I like them all. But the recipe I bring here is with razor clams. There are many ways to make it, but the most usual one to make is razor clam rice.


The best razor clams rice I ever had was in the Algarve, and I've never found another restaurant that made it as good as the one I had there.


One of these days my husband went to the square and bought some razor clams and asked me to make a nice 'razor clam rice'. I love these challenges, so I went and made it.


This time I didn't need to look for the recipe. I just remembered the ingredients and wrote them down so I wouldn't forget.


It's a simple and very tasty recipe!

Razor clam rice

Ingredients:

1kg of fresh razor clams

Water to taste

1 onion

3 cloves of garlic

½ red bell pepper

2 ripe tomatoes

1 bay leaf

Salt to taste

Pepper to taste

1 chilli pepper (dried)

2 cups of rice

1 cup white wine

Chopped coriander to taste


Preparation:

Soak the razor clams in water and salt, to lose the sand, for a few hours.


In a pan sauté the chopped onion and three garlic cloves in strips with a dash of olive oil. Add ½ bell pepper and two small diced tomatoes and let it cook for a while.

Season with a bay leaf, chilli pepper, salt and pepper.


In another pan, put the razor clams, cover and let them open (about 2 minutes). Set the razor clams and the broth that forms aside.


Add a glass of white wine to the stew, stir well, and raise the heat to lose the alcohol.


Pour 2 cups of rice into the saute, stir, and let it fry a little. Add the razor clams' broth and another 2 cups of water. Let it cook until the rice is cooked and naughty.


Remove from the heat, add the chopped coriander and the razor clams cut into pieces. Mix everything and serve with more coriander on top.
