Crunchy cookies

I tasted it, liked it, and went in search of the recipe.



I think that most people who like to cook and want to increase their menu of recipes have the habit of tasting certain foods and then going to find the recipe.


That's what happened with these cookies. I had already bought a few packages of them and one day I was craving them and didn't have them. So I thought "today's the day! I'm going to find a recipe and make the cookies. And off I went. For a change I found several recipes and, as usual, I put a little from here to there and got the perfect recipe!


I love these cookies and the crunchier the better.


It's a simple and very tasty recipe!

👉 Lemon and olive oil cookies


Ingredients:

2 cups of flour

1 cup sugar

Salt (1 pinch)

½ teaspoon baking soda

¾ cup olive oil

2 lemons (zest and juice)

1 teaspoon vanilla essence

Sugar to taste to roll the cookies


Preparation:

Preheat the oven to 180 degrees and line 2 or 3 baking trays with parchment paper.


Start by mixing the dry ingredients in a bowl (flour, sugar, salt and baking soda).


In another bowl mix the olive oil with the zest and juice of the lemons and the vanilla.


Add the liquid ingredients to the solids and mix until you have a sandy dough.


Make small balls of dough, coat them with sugar, and place them on the baking tray, spaced apart from each other.


Bake for about 15 minutes.


Allow to cool completely and store in an airtight box.
