Green beans, you can't get any greener!

A healthy recipe, very nutritious and colorful.



I love green beans, my vegetable of choice. Besides liking it, it is a very complete vegetable with several benefits for our health, such as reducing the risk of heart disease and protecting the skin, helping to eliminate fat from the liver, protecting vision and bones, and stabilizing weight. All good things!


"Green beans provide slow absorbing energy, helping to regulate appetite and consequently weight.

What's more, it is very simple to prepare, just cook and season with olive oil and vinegar and it is delicious.


The recipe I bring today is Green Beans with sautéed mushrooms with peppers and tomatoes and a boiled egg!


Let's go to the recipe


Ingredients

500g green beans (spiral cut - see video below)

1/2 red bell pepper

1 seedless tomato cut into cubes

1 chopped garlic

10 fresh sliced Paris mushrooms

Parmesan cheese, freshly grated

1 egg


Preparation:

Let's start with the green beans. Wash the green beans well and spiralize them like spaghetti (see video).


After cutting the green beans place them in a pot with water and salt and bring to a boil. After boiling, cook for another 5 minutes. Drain and set aside.


Boil the egg in a small saucepan with water for about 10 minutes. When it's cooked drain the water and let it cool down. Peel the egg and break it into slices.


In a frying pan put some olive oil and minced garlic and add the mushrooms and sauté. When the water from the mushrooms evaporates season with a little salt. Add the diced tomatoes and peppers and cook until tender.


Arrange the green beans on a plate underneath the mushrooms with the bell pepper and tomato on top and around the place the hard-boiled egg. Grate the parmesan on top and enjoy.


A simple but very tasty dish!
